Spicy Chinese hash browns

1 Potato
Half a red Onion
2 sprigs of Shallots
2 Tablespoons Spicy black bean sauce
1/8 teaspoon Salt to taste
2 or 3 Tablespoons peanut oil.

Wash all vegetables well.
Slice Potatoes into thin slices or shred.
Slice Onion into 1 inch strips.
dice up the Shallots.

Put the peanut oil into a pan on Medium heat and add the potatoes. make sure they don't burn, by moving them around often.
Wait till they are browning and add the onions and the salt.
As the onions soften add the spicy black bean sauce. stir in well.
Wait 1 minute and then add the shallots. wait 30 seconds, while stirring.
Take off heat and serve.
